Summer Time Salmon Burgers

Do you love salmon? Do you like quick, FRESH meals? Then, grab your food processor - this Salmon Burger recipe is for you!


Ingredients

Burger:
1 lb salmon
1/2 red onion chopped finely
2 cloves garlic minced
1 inch fresh ginger grated
2 tbsp mayonnaise
1/8 cup panko bread crumbs
Vegetable Oil
All purpose flour
Salt
Pepper
Dave's Killer Bread buns

Cucumber Salad:
1 cucumber sliced thinly
1 tsp sesame oil 
4 tsp rice vinegar
1 tsp Crunchy chilis in oil or gochujang
1 tsp honey
sesame seeds

Directions

1 In a food processor, finely process 1/2 the salmon until very smooth. Add remaining salmon and push until pieces are no bigger than 1/4 in - not too smooth. Transfer to a large bowl

2. Add onion, garlic, ginger, mayo breadcrumbs, salt and pepper, to the bowl. Mix all ingredients until fully combined. Make into 4 burger patties. All to rest in the fridge for 40 mins

3. Heat vegetable oil in non stick pan. Take patties out of fridge and sprinkle lightly with a coating of flour.  Place patties in pan and cook for roughly 3 mins on each side until golden brown. DON'T overcook!

4. Toss cucumbers in with a pinch of salt. Towel off to collect extra moisture.

5. In a bowl mix together sesame oil, rice vinegar, chili sauce, honey. Add cucumber and coat with dressing, Add sesame seeds to taste. 

6. Top on burgers and ENJOY.

No time? No worries! I always encourage my clients to have easy protein options in the freezer. So, if you don’t have the time or mental energy to whip up your own, you use those frozen salmon patties! You can always liven it up with a spicy mayo and top it off with fresh arugula or spinach!
